Testomonial Update:

You might like to update my testimonial statement under Troy's Bar-B-Que Smoker.

I have now used this unit for about 5 years. I have cooked Briskets, Pork Loin, Chicken, Ribs, and Whole Hog(Small). On my flat unit I have cooked several hundred steaks. I always start with 20 pounds of charcoal, which I start with gas. After the charcoal is white, I spread it and start adding my wood. I use Mesquite for Briskets, unless I am cooking for an older crowd. Older people seem to like the Mesquite, Oak mixture. Lighter meats get Hickory, Oak or a mixture.

I have now cooked over 800 briskets and many pounds of the other meats. As of yet, I have not had a single piece of meat that was not excellent. If I was not retired and like doing nothing sometimes, I could be cooking every day. I cook mostly for Church, Charities and friends. I can sale as much as I like and do so at near my cost.
